"MA, THE MEATLOAF!!!"
2 eggs, beaten
3/4 cup milk
2/3 cup fine dry bread crumbs or 2 c soft bread crumbs (2 1/2 slices)
1/4 c finely chopped onion
2 tbls fresh parsley (usually don't use fresh and it still tastes great)
1 teaspoon salt
1/2 teaspoon dried basil
1/8 teaspoon pepper
1 1/2 lbs. lean ground beef
1/4 c ketchup
2 tablespoons brown sugar
1. In medium bowl, combine eggs and milk; stir in bread crumbs, onion, parsley, salt, basil, and pepper. Add ground meat (I often only use about 1 lb. cause I usually freeze the beef in 1 lb. bags, I add a few extra onions and bread crumbs to make up for it). Mix well. Lightly pat mixture into an bread pan.
2. Bake 350 for 1 to 1 1/4 hours or until 160 degrees inside. Spoon off fat. In a small bowl combine ketchup and brown sugar; spread over the meat. Bake for 10 minutes more. Let stand for a few minutes before cutting. Makes about 8 servings.
We love this recipe and usually will have leftovers for the next day. I usually make some kind of potato and veggie with it. But we had some corn on the cob and sweet potatoes leftover from when my sister was visiting, so that is what we used this week!
